home made italian pizza

Do you want to know how to prepare a good home made italian pizza?
I'm an italian man who cares about pizza tradition, pizza makes us proud to be Italian!






Pizza - Olives and Anchovies (about 4 large pizzas)

ingredients for the pasta: flour type 00 1Kg
25g yeast
water 1lt
mozzarella: 2
oregano q.b.
sugar q, b.

(q.b. enough =)


For best results, I recommend using possibly peeled homemade mozzarella. If you can not use peeled homemade, you can use, with good results, Peeled "Cirio Polpadoro". This is especially true for tomatoes but also for all the ingredients (eg olives and anchovies): if you use homemade products, genuine, you could  find the tastes and smells in your pizza while you're tasting it.

STEP 1: Preparing Dough
• Prepare a plan of work of wood or marble and a placemat, floured.
• Pour the flour into a bowl, saving a bit 'for the later stages.
• Warm wate
• With hands, crumble the yeast into the fountain (if you have yeast in cubes).
• Add 3 teaspoons of salt in the flour inside the container.
• Put a drizzle of extra virgin olive oil into the bowl side in contact with the flour, but not in contact with the yeast.
• Add lukewarm water gradually dissolving the yeast in the bowl with your fingers. (NOTE: the oil remain separated).
• Continue as above, adding water gradually into the vessel and collecting all the flour gradually. At some point the oil is involved in the mix. Continue until dough is sticky and soft.
• Taste the mixture to verify if is insipid.

STEP 2: Preparation and leavened loaves
• Helping with the flour and possibly with a knife to clean your hands wash it  with hot water and dry it.
• Take the dough from the bowl and put it on the work surface, using flour.
• Add a little flour and knead for a few minutes.
• Make a cylinder with the dough and divide it into 4 loaves cutting with a knife.
• Use individual loaves, and use the knife approximately 1 cm deep with a cross on them and let them rise for about an hour and a tablecloth covered by the blanket.

STEP 3: Preparation Dressing
• Empty 3 pots of pulp into a bowl.
• Add 1.5 teaspoons of sugar and mix. (if the pulp is homemade, you can avoid the sugar).
• Add 2 teaspoons of salt.
• Cut the anchovies into small pieces
• Add olives, cutting into pieces
• With a potato masher, cut the mozzarella into small pieces

STEP 4: Setting Up Pizza and Baking
Now each cake will become a pizza. Here's the description on a single pizza.
• Coat with extra virgin olive oil the pan, spread the oil with your hands up to cover the entire surface of the pan.
• Take a ball and expand it with your hands
• Place the loaf on the baking pan and extend further, to cover the entire surface of the pan.
• Using a fork, Prick the dough.
• Put the anchovies and olives.
• Using a spoon, spread the tomato pulp previously prepared on the pizza.
• Add a sprinkle of oregano
• Add a touch of extra virgin olive oil.
• Bake in preheated oven (10 minutes at 200 degrees)
• At the half cooked add the mozzarella as you want.
• Replace the pizza oven and wait until the end of cooking.
• Serve hot.
